Easy Meals for Cinco De Mayo
Cinco de Mayo may only come around once a year, but if you live with someone who loves a little spice like D does, it can feel like we’re celebrating it all year long. Around here, anything with bold flavor, a little heat, and those Mexican-inspired touches is always a good idea—whether it’s a special occasion or just a regular weeknight dinner.
Over the years, I’ve shared quite a few of my favorite Mexican-flavored recipes, and I thought it would be fun to gather some of them all in one place. Some of these recipes go back three or four years, so they might be new to many of you. And even if you’ve seen them before, they’re the kind of tried-and-true dishes that are always worth making again.
What I love most about these recipes is how simple and comforting they are. You don’t need anything fancy—just good ingredients, a little time in the kitchen, and a willingness to add a pinch (or two!) of spice. From hearty dinners to fun, shareable dishes, these are the kinds of meals that bring people together around the table.
Whether you’re celebrating Cinco de Mayo, planning a family dinner, or just craving something with a little extra flavor, I hope these recipes inspire you. And if you make one (or a few!), I’d love to hear which ones become your favorites too.
