TACO STUFFED PEPPERS

A delicious low-carb twist on taco night! Colorful bell peppers filled with flavorful protein-packed taco mixture and topped with melty cheese for an easy, satisfying meal.

Ingredients

  • 4 large bell peppers, cut in half to create a bowl and seeds removed.
  • 1 pound lean ground beef
  • 1 tablespoon taco seasoning
  • 1 can black beans, rinsed and drained
  • 1 cup salsa
  • 2 cups shredded Mexican blend cheese

Instructions

  1. Preheat oven to 375°F.
  2. Slice the bell peppers in half to create a bowl and remove the seeds. Place them cut-side up in a baking dish.
  3. Brown the ground beef in a skillet over medium heat. Drain excess grease if needed.
  4. Stir in the taco seasoning, black beans and salsa. Simmer for 3-5 minutes.
  5. Spoon the taco mixture evenly into each pepper half.
  6. Cover with foil and bake for 25 minutes.
  7. Remove the foil, sprinkle with cheese and bake another 5 minutes, or until the cheese is melted.
  8. Garnish with your favorite toppings.
