TACO STUFFED PEPPERS
A delicious low-carb twist on taco night! Colorful bell peppers filled with flavorful protein-packed taco mixture and topped with melty cheese for an easy, satisfying meal.
Ingredients
- 4 large bell peppers, cut in half to create a bowl and seeds removed.
- 1 pound lean ground beef
- 1 tablespoon taco seasoning
- 1 can black beans, rinsed and drained
- 1 cup salsa
- 2 cups shredded Mexican blend cheese
Instructions
- Preheat oven to 375°F.
- Slice the bell peppers in half to create a bowl and remove the seeds. Place them cut-side up in a baking dish.
- Brown the ground beef in a skillet over medium heat. Drain excess grease if needed.
- Stir in the taco seasoning, black beans and salsa. Simmer for 3-5 minutes.
- Spoon the taco mixture evenly into each pepper half.
- Cover with foil and bake for 25 minutes.
- Remove the foil, sprinkle with cheese and bake another 5 minutes, or until the cheese is melted.
- Garnish with your favorite toppings.
