EASY HAMBURGER SOUP

A cozy pot of hamburger soup made with ground beef, potatoes, and vegetables simmered in a flavorful broth. Simple ingredients, BIG comfort.

Ingredients

  • 1 lb lean ground beef
  • 1 cup onion, chopped
  • 2 medium potatoes, peeled and diced
  • 1 (15 oz) can whole kernel corn, drained
  • 1 (28 oz) can diced tomatoes
  • Beef broth or water (enough to cover potatoes)
  • Salt and pepper, to taste

Instructions

  1. In a skillet, brown the ground beef until fully cooked. Drain and set aside.
  2. In a large pot, add the chopped onion and diced potatoes.
  3. Pour in enough water or a mix of beef broth and water to cover the potatoes.
  4. Cook over medium heat until the potatoes are tender.
  5. Stir in the cooked ground beef, corn, diced tomatoes, salt, and pepper.
  6. Reduce heat and simmer for 20 minutes, stirring occasionally.
  7. Taste and adjust seasoning as needed before serving.
