EASY HAMBURGER SOUP
A cozy pot of hamburger soup made with ground beef, potatoes, and vegetables simmered in a flavorful broth. Simple ingredients, BIG comfort.
Ingredients
- 1 lb lean ground beef
- 1 cup onion, chopped
- 2 medium potatoes, peeled and diced
- 1 (15 oz) can whole kernel corn, drained
- 1 (28 oz) can diced tomatoes
- Beef broth or water (enough to cover potatoes)
- Salt and pepper, to taste
Instructions
- In a skillet, brown the ground beef until fully cooked. Drain and set aside.
- In a large pot, add the chopped onion and diced potatoes.
- Pour in enough water or a mix of beef broth and water to cover the potatoes.
- Cook over medium heat until the potatoes are tender.
- Stir in the cooked ground beef, corn, diced tomatoes, salt, and pepper.
- Reduce heat and simmer for 20 minutes, stirring occasionally.
- Taste and adjust seasoning as needed before serving.
