SWEET HAWAIIAN CROCKPOT CHICKEN

Tender chicken slow-cooked in a sweet and savory pineapple sauce with onions and bell peppers. This easy Hawaiian-inspired dish is packed with flavor and perfect for busy days.

Ingredients

  • 1/2 cup pineapple juice
  • 1/2 cup brown sugar
  • 1/3 cup soy sauce
  • 2 pounds chicken breast, cut into cubes
  • 1 onion, chopped
  • 1 green bell pepper, chopped

Instructions

  1. Place the cubed chicken, onion, and bell pepper in a crockpot.
  2. In a bowl, whisk together the pineapple juice, brown sugar, and soy sauce.
  3. Pour the sauce over the chicken and vegetables.
  4. Cover and cook on Low for 6-7 hours or High for 3-4 hours, until the chicken is tender and fully cooked.
  5. Stir before serving and spoon over rice or cauliflower rice if desired.
