PUERTO RICAN BEANS
My brother-in-law Edgardo is from Puerto Rico, and he makes the most delicious beans. They are simple, flavorful, and full of island comfort.
Ingredients
- 1/2 tablespoon oil
- 1 tablespoon sofrito (see note below)
- 1/3 cup onion, chopped
- 1/3 cup green pepper, chopped
- 1 can unseasoned beans (any variety)
- 1/4 teaspoon salt
- 1/4 teaspoon oregano
- 1/4 teaspoon basil
- Dash black pepper
- 1 packet Sazon Goya
- 1/8 cup cooking wine
Instructions
- Heat the oil in a medium saucepan over medium-low heat.
- Add sofrito, onion, and green bell pepper. Sauce until the onion becomes translucent.
- Stir in the beans, salt, oregano, basil, black pepper, Sazon, and cooking wine.
- Bring the mixture to a boil, then reduce the heat and simmer for 5 minutes.
- Optional- For a thicker, heartier sauce, stir in tomato sauce, 1/4 cup cubed potato or pumpkin. Continue cooking until vegetables are tender.
- Homemade Sofrito- Blend together fresh cilantro, onion, green bell pepper, and garlic until smooth. Store in the refrigerator or freeze in small portions for easy use in future recipes.
