Puerto Rican Garlic Rice
We love it when Ed makes the rice during family dinners. I convinced him to show us all how he makes his version. I couldn’t believe how simple and easy it was!

PUERTO RICAN GARLIC RICE
Ingredients
- 3 1/3 cups water
- 2 teaspoons salt
- 1/2 teaspoon garlic powder
- 2 tablespoons olive oil (or use butter for richer flavor)
- 2 cups long grain white rice
Instructions
- In a medium saucepan, bring water to a boil over high heat.
- While water is heating, stir in salt, garlic powder, and olive oil (or butter).
- Once boiling, add rice and stir. Bring back to a boil.
- Reduce heat to just below medium and cook uncovered until water is absorbed.
- Stir the rice again, cover and reduce heat to low. Simmer for 10 minutes.
- Stir rice again, cover and simmer for another 10 minutes.
- Once the rice is tender and fully cooked, fluff with a fork and serve.
- Optional: Crispy Bottom Rice (Pegao): After final simmer, cook covered over low heat for an additional 5 minutes without stirring to create a golden, crispy layer on the bottom.
