COCONUT CRUNCH CHOCOLATE CHIP COOKIES
These cookies combine buttery coconut flavor with the satisfying crunch of Honey Bunches of Oats and rich chocolate chips. Soft in the center with crisp edges--perfect for lunchboxes, potlucks or anytime!
Ingredients
- 1 cup butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 2/3 cup sweetened shredded coconut
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 1/2 cups Honey Bunches of Oats (lightly crushed; any variety)
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 350°.
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Mix in the egg and shredded coconut until well combined.
- Add the flour, baking soda, baking powder, and salt. Mix well.
- Add the crushed cereal and chocolate chips. Mix well.
- Scoop dough using a cookie scoop and place on an ungreased baking sheet, spacing about 2 inches apart.
- Bake for 10 minutes, or until the edges are lightly golden.
- Cool on the baking sheet for 2 minutes, then transfer to a wire rack to cool completely.
