PUERTO RICAN GARLIC RICE

Ingredients

  • 3 1/3 cups water
  • 2 teaspoons salt
  • 1/2 teaspoon garlic powder
  • 2 tablespoons olive oil (or use butter for richer flavor)
  • 2 cups long grain white rice

Instructions

  1. In a medium saucepan, bring water to a boil over high heat.
  2. While water is heating, stir in salt, garlic powder, and olive oil (or butter).
  3. Once boiling, add rice and stir. Bring back to a boil.
  4. Reduce heat to just below medium and cook uncovered until water is absorbed.
  5. Stir the rice again, cover and reduce heat to low. Simmer for 10 minutes.
  6. Stir rice again, cover and simmer for another 10 minutes.
  7. Once the rice is tender and fully cooked, fluff with a fork and serve.
  8. Optional: Crispy Bottom Rice (Pegao): After final simmer, cook covered over low heat for an additional 5 minutes without stirring to create a golden, crispy layer on the bottom.
