MOM'S FAMOUS POTATO SALAD

This beloved potato salad is a staple at every family gathering--full of bold flavors, creamy texture, and that special touch only Mom can bring. She always leaves the skins on the potatoes and uses her homemade green tomato relish, making it unforgettable.

Ingredients

  • 5 lbs potatoes, scrubbed and cubed (skin on)
  • 1/2 cup cooked and crumbled bacon
  • 2 boiled eggs, chopped
  • 2 tablespoons sweet relish (or green tomato relish, if you have Mom's)
  • 1 cup chopped celery
  • 1 to 2 cups mayonnaise
  • 1 teaspoon garlic salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 teaspoon Slap Ya Mama
  • 1/2 teaspoon curry powder

Instructions

  1. Boil the potatoes in salted water until fork-tender, about 10-15 minutes. Drain and let cool slightly.
  2. In a large bowl, combine the warm potatoes, chopped eggs, bacon and relish.
  3. Add garlic salt, black pepper, salt, Slap Ya Mama, and curry powder.
  4. Add 1 cup mayonnaise to start, folding everything together gently. Add more mayo as needed to reach your desired creaminess.
  5. Taste and adjust seasonings if needed. Chill for at least 1 hour before serving to let the flavors meld.
  6. Best served cold, straight from the fridge. Even better the next day!
