SLOW COOKER CREAMY CHICKEN FAJITA SOUP

This creamy chicken fajita soup is a comforting slow cooker favorite--packed with tender chicken, beans, corn, salsa, and spices, finished with melty cheese and your favorite toppings.

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 2 cans cream of chicken soup
  • 1 cup salsa
  • 2 cups frozen corn
  • 1 can black beans, drained
  • 1 1/2 cups water
  • 1 teaspoon cumin
  • 1/2 teaspoon dried cilantro
  • 1 cup shredded cheese
  • OPTIONAL TOPPINGS- diced tomato, avocado, sour cream, tortilla chips

Instructions

  1. Place chicken breasts in the bottom of the slow cooker.
  2. Add cream of chicken soup, salsa, corn, black beans, water, cumin, and cilantro. Stir to combine.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours, until chicken is cooked through.
  4. Shred chicken with two forks, then stir back into the soup.
  5. Add shredded cheese and stir until melted and creamy.
  6. Serve hot with your favorite toppings like tomato, avocado, sour cream, or tortilla chips.
