SLOW COOKER CREAMY CHICKEN FAJITA SOUP
This creamy chicken fajita soup is a comforting slow cooker favorite--packed with tender chicken, beans, corn, salsa, and spices, finished with melty cheese and your favorite toppings.
Ingredients
- 1 lb boneless, skinless chicken breasts
- 2 cans cream of chicken soup
- 1 cup salsa
- 2 cups frozen corn
- 1 can black beans, drained
- 1 1/2 cups water
- 1 teaspoon cumin
- 1/2 teaspoon dried cilantro
- 1 cup shredded cheese
- OPTIONAL TOPPINGS- diced tomato, avocado, sour cream, tortilla chips
Instructions
- Place chicken breasts in the bottom of the slow cooker.
- Add cream of chicken soup, salsa, corn, black beans, water, cumin, and cilantro. Stir to combine.
- Cover and cook on low for 6-7 hours or high for 3-4 hours, until chicken is cooked through.
- Shred chicken with two forks, then stir back into the soup.
- Add shredded cheese and stir until melted and creamy.
- Serve hot with your favorite toppings like tomato, avocado, sour cream, or tortilla chips.
