Easy White Chicken Chili

EASY WHITE CHICKEN CHILI

EASY WHITE CHICKEN CHILI

I found this recipe on the back of a can of Bush's Great Northern Beans years ago. It is one of our favorites! I won a church chili cookoff with this recipe! You will love how simple and yummy it is!

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 1 can (4 ounce) chopped green chilies, drained
  • 3 tablespoons all-purpose flour
  • 2 teaspoons cumin
  • 2 cans (15.8 ounce) Great Northern Beans (or Navy)
  • 1 can (14.5 ounce) chicken broth
  • 1 1/2 cups finely chopped cooked chicken breast (I use canned chicken or a rotisserie chicken)
  • Shredded Monterey Jack cheese (optional)
  • Sour Cream (optional)
  • Salsa (optional)

Instructions

  1. In a large skillet, cook onion in oil for 4 minutes or until transparent. Add chilies, flour and cumin; cook and stir for 1 minute.
  2. Add beans and chicken broth; bring to a boil. Reduce heat; simmer for 10 minutes or until thickened.
  3. Add chicken; cook until hot.
  4. Garnish with cheese, sour cream, and salsa, if desired.
