Copycat Chick Fil A Chicken Tortilla Soup

I absolutely looove Chick fil A ---and I really love their soup! Mama Sue's copycat version is hearty, flavorful, and so comforting. It's packed with tender chicken, beans, and just the right blend of spices. So good and so easy to make at home!

MAMA SUE'S COPYCAT CHICK FIL A TORTILLA SOUP

Ingredients

  • 2 tablespoons oil
  • 1 medium onion, chopped
  • 2 teaspoons minced garlic
  • 2 teaspoons dried oregano
  • 2 teaspoons cumin
  • 2 (10 oz) cans Rotel, undrained
  • 3 (15 oz) cans cannellini beans (drain 2 cans and puree, leave 1 can whole)
  • 1 (15 oz) can creamed corn
  • 1 (15 oz) can whole kernel corn, undrained
  • 1 (15 oz) can black beans, undrained
  • 1 teaspoon kosher salt
  • Juice of 1 lime
  • 2 chicken breasts, cooked and shredded (I used a rotisserie chicken)

Instructions

  1. In a large pot, heat oil over medium heat. Add chopped onion and cook until softened, about 4-5 minutes.
  2. Stir in garlic, oregano, and cumin. Cook for 1 minute.
  3. Add Rotel (with juice), whole cannellini beans, pureed cannellini beans, creamed corn, kernel corn, and black beans and lime juice. Stir well.
  4. Add shredded chicken and salt.
  5. Simmer on low for 35-45 minutes, stirring occasionally, until heated through and slightly thickened.
  6. Serve warm with tortilla strips, shredded cheese, avocado, jalapeños, or fresh cilantro if desired.
