EASY CHICKEN CURRY

This simple chicken curry is creamy, cozy, and full of flavor. Rotisserie chicken makes it quick and easy, while the curry and almonds add a delicious twist.

Ingredients

  • 1 (26 oz) can cream of chicken soup
  • 1 cup water
  • 1 teaspoon curry powder
  • 2 cups cooked chicken (rotisserie chicken works great)
  • 1/2 cup sliced almonds
  • Cooked rice or mashed potatoes, for serving

Instructions

  1. In a large skillet or saucepan, stir together the cream of chicken soup, water, and curry powder.
  2. Heat over medium, stirring until smooth and gravy-like.
  3. Add the cooked chicken and sliced almonds, mixing well.
  4. Simmer for a few minutes until heated through.
  5. Serve over rice or mashed potatoes.
