TRISHA'S BANANA CAKE

Ingredients

CAKE
  • 1/4 cup shortening
  • 1 cup sugar
  • 2 eggs, well beaten
  • 3 ripe bananas, mashed
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
CREAM CHEESE FROSTING
  • 1/2 cup butter, softened
  • 8 ounces cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 4 cups powdered sugar

Instructions

CAKE
  1. Preheat oven to 350°F. Grease a 10x15 jellyroll pan or 9x13-inch baking dish.
  2. In a large bowl, cream together the shortening and sugar until light and fluffy.
  3. Beat in the eggs, bananas, milk and vanilla extract until well combined.
  4. Add the flour, baking soda, and salt to the banana mixture, mixing just until combined.
  5. Pour the batter into the prepared baking pan and spread evenly.
  6. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the cake to cool completely before frosting.
CREAM CHEESE FROSTING
  1. In a large bowl, beat the butter and cream cheese until smooth and creamy.
  2. Add the vanilla extract and salt.
  3. Gradually beat in the powdered sugar until light and fluffy.
  4. Spread evenly over the cooled cake.
