LUNCH LADY BROWNIES

These rich, fudgy brownies are soft, chocolatey, and topped with a simple homemade frosting--just like the classic school cafeteria favorite!

Ingredients

BROWNIE
  • 1/2 cup butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1/4 cup unsweetened cocoa powder
  • 1 cup all-purpose flour
FROSTING
  • 2 tablespoons butter, softened
  • 3 tablespoons milk
  • 2 tablespoons unsweetened cocoa powder
  • 1 1/2 cups powdered sugar

Instructions

BROWNIE
  1. Preheat oven to 350°F. Grease or line a 9x9-inch baking pan.
  2. In a large bowl, cream together the melted butter and sugar.
  3. Add in eggs and vanilla until combined.
  4. Mix in the cocoa powder and flour. Do not overmix.
  5. Spread the batter evenly into the prepared pan.
  6. Bake for 20-25 minutes, until the center is just set. Do not overbake for the fudgiest brownies.
  7. Let the brownies cool slightly while you prepare the frosting.
FROSTING
  1. In a medium bowl, beat together the softened butter, milk, cocoa powder, and powdered sugar until smooth and creamy.
  2. Spread the frosting over the slightly warm brownies.
  3. Allow the frosting to set before slicing into squares and serving.
