SWEET & CRUNCHY PEA SALAD

A creamy, sweet-and-savory pea salad loaded with crispy bacon, crunchy peanuts, and fresh veggies. This easy, crowd-pleasing side is perfect for spring gatherings, potlucks, or your Easter table!

Ingredients

SALAD

• 3 cups frozen peas
• 1/4 cup purple onion, finely chopped
• 1/2 cup celery, diced
• 1/2 cup peanuts
• 1/2 cup crumbled cooked bacon

DRESSING

• 1/2 cup mayonnaise
• 1 tablespoon apple cider vinegar
• 1-2 tablespoon sugar (to taste)
• Salt & pepper to taste

Instructions

1. In a large bowl, combine peas, purple onion, celery, peanuts, and crumbled bacon.
2. In a small bowl, whisk together mayonnaise, vinegar, sugar, salt, and pepper.
3. Pour dressing over the salad and stir until well coated.
4. Chill for at least 1 hour before serving.
