Simple Summer Skillet Squash

SIMPLE SUMMER SKILLET SQUASH
A buttery, tender side dish that celebrates the sweetness of summer squash.
Ingredients
- 2 tablespoons butter
- 1 onion, diced
- 2 pounds yellow squash, sliced into 1/4 inch rounds
- 1/3 cup chicken broth
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper
Instructions
- In a large skillet over medium heat, melt the butter. Add the diced onion and saute for 3 minutes until softened.
- Add the sliced yellow squash to the skillet. Cook for 3 to 5 minutes, stirring occasionally, until the squash begins to soften.
- Pour in the chicken broth. Add salt and pepper. Stir to combine.
- Cover and cook for 5 to 8 minutes, until the squash is tender but not mushy.
- Uncover and cook for 1-2 more minutes needed to reduce excess liquid.
- Tip- Garnish with fresh parsley or sprinkle of Parmesan for an extra touch!
