Ingredients

  • 2 tablespoons butter
  • 1 onion, diced
  • 2 pounds yellow squash, sliced into 1/4 inch rounds
  • 1/3 cup chicken broth
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper

Instructions

  1. In a large skillet over medium heat, melt the butter. Add the diced onion and saute for 3 minutes until softened.
  2. Add the sliced yellow squash to the skillet. Cook for 3 to 5 minutes, stirring occasionally, until the squash begins to soften.
  3. Pour in the chicken broth. Add salt and pepper. Stir to combine.
  4. Cover and cook for 5 to 8 minutes, until the squash is tender but not mushy.
  5. Uncover and cook for 1-2 more minutes needed to reduce excess liquid.
  6. Tip- Garnish with fresh parsley or sprinkle of Parmesan for an extra touch!
