SHEET PAN SHRIMP FAJITAS
Healthy never tasted so good! Juicy shrimp, crisp veggies, and zesty fajita seasoning all baked together for a simple, nourishing dinner.
Ingredients
- 1.5 pounds shrimp, peeled, deveined, tails removed
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 onion, thinly sliced
- 1 (1 oz) packet fajita seasoning
- 2 tablespoons olive oil
- Tortillas or rice (optional, for serving)
Instructions
- Preheat your oven to 425 °.
- Spread the shrimp evenly on a sheet pan that has edges.
- Squeeze lime juice over the shrimp.
- Arrange the sliced peppers and onion around the shrimp.
- Drizzle everything with olive oil and sprinkle with fajita seasoning. Toss lightly to coat.
- Bake for 7 minutes, then stir everything together.
- Return to the oven and bake for an additional 8 minutes, or until the shrimp are fully cooked and vegetables are tender.
- Serve hot with rice or warm tortillas.
