NO BAKE PEACH CHEESECAKE

A creamy, no-bake cheesecake with a graham cracker crust, fluffy cream cheese filling, and fresh juicy peaches--simple, refreshing, and delicious!

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 8 tablespoons butter, melted
  • 2 tablespoons sugar
  • 16 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla
  • 1 cup heavy cream, whipped to stiff peaks (makes it light & fluffy)
  • 2-3 fresh peaches, peeled and diced
  • 1-2 tablespoons honey or sugar (optional, depending on peach sweetness)

Instructions

CRUST
  1. Mix graham cracker crumbs, butter, and sugar
  2. Press into the bottom of a springform pan (or pie dish). Chill 15 minutes.
FILLING
  1. Beat cream cheese until smooth. Add powdered sugar and vanilla.
  2. Gently fold in whipped cream until light and fluffy.
PEACHES
  1. In a bowl, toss peaches with honey (or sugar).
  2. Let sit 5-10 minutes to release juices.
  3. Add peaches to cream cheese filling. Mix well.
  4. Spread over chilled crust.
  5. Refrigerate at least 4 hours (or overnight) before serving.
