A creamy, no-bake cheesecake with a graham cracker crust, fluffy cream cheese filling, and fresh juicy peaches--simple, refreshing, and delicious!
Ingredients
- 1 1/2 cups graham cracker crumbs
- 8 tablespoons butter, melted
- 2 tablespoons sugar
- 16 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla
- 1 cup heavy cream, whipped to stiff peaks (makes it light & fluffy)
- 2-3 fresh peaches, peeled and diced
- 1-2 tablespoons honey or sugar (optional, depending on peach sweetness)
Instructions
CRUST
- Mix graham cracker crumbs, butter, and sugar
- Press into the bottom of a springform pan (or pie dish). Chill 15 minutes.
FILLING
- Beat cream cheese until smooth. Add powdered sugar and vanilla.
- Gently fold in whipped cream until light and fluffy.
PEACHES
- In a bowl, toss peaches with honey (or sugar).
- Let sit 5-10 minutes to release juices.
- Add peaches to cream cheese filling. Mix well.
- Spread over chilled crust.
- Refrigerate at least 4 hours (or overnight) before serving.
