MeMe’s Vegetable Soup

Using canned tomatoes and frozen mixed vegetables makes this a simple, budget-friendly meal that comes together with very little prep. Perfect for a cozy weeknight dinner or making a big batch to enjoy all week.

VEGETABLE SOUP

Ingredients

  • 1 (32 oz) bag frozen mixed vegetables
  • 1 (14.5 oz) can petite diced tomatoes
  • 1 (28 oz) can crushed tomatoes
  • 1 (10.5 oz) can Campbell's beef broth I used beef consommé
  • 2 teaspoons salt
  • Black pepper, to taste
OPTIONAL
  • 1 leftover ham bone
  • 2 cups water

Instructions

  1. Add the frozen vegetables, petite diced tomatoes, crushed tomatoes, beef broth, salt, and pepper to a large pot.
  2. Bring the soup to a boil, Reduce heat to medium and simmer for at least 1 hour, stirring often.
  3. If using a ham bone: Add the ham bone and 2 cups of water to the pot and omit the beef broth. Simmer for at least 1 hour, stirring occasionally. Remove the ham bone before serving. Taste and adjust the salt and pepper.
