EASY STRAWBERRY RHUBARB DUMP CAKE

40 years ago, Darryl remembers a strawberry/rhubarb pie that was DeLiCiOuS! He thought he would try to make a dump cake. It was a hit!

Ingredients

  • 4 cups rhubarb, diced
  • 2 cups strawberries, sliced
  • 3/4 cup granulated sugar
  • 1 (3 oz) package strawberry Jell-o
  • 1 (15.25 oz) yellow cake mix
  • 2 sticks butter, cut into thin pats

Instructions

  1. Preheat oven to 350°. Spray the bottom of a 9x13-inch baking dish with non-stick cooking spray. Arrange rhubarb in an even layer in the pan. Sprinkle with 1/2 cup sugar.
  2. Arrange strawberries evenly over rhubarb. Sprinkle with remaining sugar. Sprinkle dry strawberry Jell-o powder over the strawberries.
  3. Sprinkle the dry cake mix evenly on top of the rhubarb/strawberry layer.
  4. Add pats of butter in rows over cake mix. DO NOT STIR.
  5. Bake for 45-55 minutes until golden brown on top and bubbly on the edges.
  6. Serve warm with vanilla ice cream.
