Easy No Bake Key Lime Pie

When I found this recipe, I knew I had to try it. It has a hearty graham cracker crust and a smooth lime filling. It's sweet, tangy and refreshing!

EASY NO-BAKE KEY LIME PIE

When I found this recipe, I knew I had to try it. It has a hearty graham cracker crust and a smooth lime filling. It's sweet, tangy and refreshing!

Ingredients

CRUST
  • 2 sleeves graham cracker crust (I love to use the cinnamon kind)
  • 1/2 cup butter, melted
  • 2 tablespoons sugar
KEY LIME FILLING
  • 3 (8 oz) packages of cream cheese (softened)
  • 1 (14 oz) sweetened condensed milk
  • 3/4 cup fresh lime juice
  • 1 tablespoon lime zest
  • 1 (8 oz) Cool Whip

Instructions

CRUST
  1. Crush graham crackers in a food processor or in a ziplock bag until you get fine crumbs.
  2. In a small bowl, combine the crumbs with the sugar and add melted butter. Mix until well combined.
  3. Press the crumb mixture firmly into the bottom of the prepared pie pan. Place the crust in the freezer for at least 10 minutes to set while making the filling.
KEY LIME FILLING
  1. In a large mixing bowl using a hand mixer on medium speed, beat the softened cream cheese until smooth and creamy.
  2. Add the sweetened condensed milk, lime juice, and zest and beat until well combined.
  3. With a rubber spatula, fold in the thawed Cool Whip.
  4. Remove the pie crust from the freezer and pour the pie filling into the prepared crust. Spread evenly with a knife or spatula.
  5. Place the pie in the refrigerator and chill for at least 4 hours, or overnight. This will allow the filling to set and hold it's shape when cutting.
  6. When ready to serve, pipe with whipped cream and garnish with fresh lime slices and freshly grated lime zest. Enjoy!
