CROCKPOT SUNDAY ROAST

A comforting, slow-cooked Sunday roast with tender, seasoned beef, hearty vegetables, and a rich, savory mushroom gravy.

Ingredients

  • 1 chuck roast
  • 1 can golden mushroom soup
  • 1 can French onion soup
  • 1 onion, quartered
  • 1 bag carrots (peeled & cut or baby carrots)
  • 5 potatoes, peeled & cubed (or baby potatoes)
  • 3 cloves garlic
  • 1 (8 oz) container whole white mushrooms
  • 1 can water
  • Salt & pepper

Instructions

  1. Season the chuck roast generously with salt and pepper.
  2. Place the roast in the bottom of the crockpot.
  3. Add the onion, carrots, potatoes, garlic, and whole mushrooms around the roast.
  4. In a small bowl, whisk together the golden mushroom soup, French onion soup, and 1 can water.
  5. Pour the mixture over the roast and vegetables.
  6. Cover and cook on low for 8-10 hours or high for 5-6 hours, until the meat is tender and falling apart.
  7. Serve warm with the vegetables and spoon the gravy over the top.
