CROCKPOT SUNDAY ROAST
A comforting, slow-cooked Sunday roast with tender, seasoned beef, hearty vegetables, and a rich, savory mushroom gravy.
Ingredients
- 1 chuck roast
- 1 can golden mushroom soup
- 1 can French onion soup
- 1 onion, quartered
- 1 bag carrots (peeled & cut or baby carrots)
- 5 potatoes, peeled & cubed (or baby potatoes)
- 3 cloves garlic
- 1 (8 oz) container whole white mushrooms
- 1 can water
- Salt & pepper
Instructions
- Season the chuck roast generously with salt and pepper.
- Place the roast in the bottom of the crockpot.
- Add the onion, carrots, potatoes, garlic, and whole mushrooms around the roast.
- In a small bowl, whisk together the golden mushroom soup, French onion soup, and 1 can water.
- Pour the mixture over the roast and vegetables.
- Cover and cook on low for 8-10 hours or high for 5-6 hours, until the meat is tender and falling apart.
- Serve warm with the vegetables and spoon the gravy over the top.
