COWGIRL CAVIAR

This colorful dip is perfect for picnics, potlucks, or snacking anytime. It's fresh, zesty, and packed with flavor--cowgirl approved!

Ingredients

  • 1 (15 oz) can great northern beans, rinsed and drained
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (15 oz) can kernel corn, drained
  • 1/2 cup red bell pepper, diced
  • 2 tablespoons red onion, diced
  • 2 tablespoons fresh cilantro, finely chopped
  • 2 Roma tomatoes, diced
  • 2 tablespoons lime juice (I like to use fresh lime juice)
  • 1/3 cup Italian dressing
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine great northern beans, black beans, corn, bell pepper, red onion, cilantro, and tomatoes.
  2. Add lime juice and Italian dressing, then gently stir to combine.
  3. Season with salt and pepper to taste.
  4. Chill for at least 30 minutes to let the flavors blend.
  5. Serve with lime tortilla chips--or your favorite kind!
