Aunt Lannette’s Sweet Pickle Salad

AUNT LANNETTE'S SWEET PICKLE MACARONI SALAD
Aunt Lannette shared this recipe with me years and years ago. The touch of sweet pickles makes this salad extra special--great for potlucks, picnics, or anytime you need comfort in a bowl.
Ingredients
- 1 (16 oz) box small shell pasta
- 1 cup frozen peas (no need to thaw)
- 1 cup Sweet Baby gherkin pickles, sliced
- 1 (8 oz) block cheddar cheese, cut into small cubes
- 1/2 cup finely diced onion (optional)
- 1 cup mayonnaise (or to taste)
- Salt and pepper, to taste
Instructions
- Cook pasta according to package directions. Drain and rinse with cold water to cool.
- In a large bowl, combine cooled pasta, frozen peas, sliced gherkin pickles, cheddar cubes, and onion if using.
- Stir in mayonnaise until everything is well coated.
- Season with salt and pepper to taste.
- Chill for at least 1 hour before serving to let flavors come together.
