This pie is creamy, tangy, and refreshing--perfect for summer gatherings without feeling heavy.

Ingredients

  • 1 (9-inch) graham cracker crust
  • 1 (1.5 oz) package sugar-free instant vanilla pudding
  • 1 cup milk
  • 1 cup vanilla Greek yogurt
  • 1/3 cup fresh lemon juice (about 2 lemons)
  • 1 tablespoon lemon zest

Instructions

  1. In a large bowl, whisk together the pudding mix and milk for about 2 minutes until it begins to thicken.
  2. Stir in the Greek yogurt, lemon juice, and lemon zest until smooth.
  3. Gently fold in the whipped topping until fully combined.
  4. Spoon the filling into the graham cracker crust and smooth the top.
  5. Refrigerate for at least 4 hours, or overnight, until set.
  6. Garnish with additional lemon slices and fresh mint, if desired.
