Ingredients

  • 1 lb breakfast sausage, cooked and crumbled
  • 1 (25 oz) jar spaghetti sauce (I used Mezetta Spicy Marinara.)
  • 1 (10 oz) package zucchini veggie spirals (found in the produce section, or make your own)
  • 3 tablespoons butter
  • 2 teaspoons minced garlic (I used the jarred garlic.)
  • Pinch of salt
  • Pinch black pepper
  • Grated Parmesan cheese, for serving

Instructions

  1. In a large skillet, cook the breakfast sausage until browned and crumbled. Drain any excess grease.
  2. Stir in the marinara sauce and let it simmer while you prepare the zucchini noodles.
  3. In a separate skillet, melt the butter over medium heat. Add the garlic and cook for 30 seconds until fragrant.
  4. Add the zucchini spirals, salt, and pepper. Cook for 3-5 minutes, stirring occasionally, until the zucchini is just tender.
  5. Drain off any excess liquid from the zucchini.
  6. Divide the zucchini noodles among serving plates. Spoon the marinara over the top and finish with plenty of grated Parmesan cheese.
