Skip the pasta without sacrificing flavor! This spaghetti skillet is packed with savory sausage, spicy marinara, and tender zucchini spirals for a quick, protein-packed meal the whole family will love.
Ingredients
- 1 lb breakfast sausage, cooked and crumbled
- 1 (25 oz) jar spaghetti sauce (I used Mezetta Spicy Marinara.)
- 1 (10 oz) package zucchini veggie spirals (found in the produce section, or make your own)
- 3 tablespoons butter
- 2 teaspoons minced garlic (I used the jarred garlic.)
- Pinch of salt
- Pinch black pepper
- Grated Parmesan cheese, for serving
Instructions
- In a large skillet, cook the breakfast sausage until browned and crumbled. Drain any excess grease.
- Stir in the marinara sauce and let it simmer while you prepare the zucchini noodles.
- In a separate skillet, melt the butter over medium heat. Add the garlic and cook for 30 seconds until fragrant.
- Add the zucchini spirals, salt, and pepper. Cook for 3-5 minutes, stirring occasionally, until the zucchini is just tender.
- Drain off any excess liquid from the zucchini.
- Divide the zucchini noodles among serving plates. Spoon the marinara over the top and finish with plenty of grated Parmesan cheese.
