Sheet Pan Sausage and Peppers

SHEET PAN SAUSAGE & PEPPERS
A colorful mix of sausage, peppers, onions, and mushrooms roasted to tender perfection on one sheet pan. So delicious and so simple!
Ingredients
- 1 pound Conecuh Sausage, cut into bite-sized pieces (or your favorite link sausage)
- 1 yellow bell pepper, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 1 (8 oz) container of sliced fresh mushrooms
- 2-3 tablespoons olive oil
- Salt and pepper, to taste
Instructions
- Preheat oven to 400°.
- Combine sausage, bell peppers, onions, and mushrooms in a large bowl.
- Drizzle olive oil over the vegetables. Sprinkle with salt and pepper. Toss until everything is evenly coated.
- Spread mixture evenly on a large rimmed sheet pan.
- Bake for 15 minutes. Remove from oven and toss the mixture.
- Bake for another 15 minutes, or until sausage is cooked through and vegetables are tender.
- Serve as-is, or with hoagie rolls for sandwiches, or over rice for a heartier meal.
