SHEET PAN SAUSAGE & PEPPERS

Ingredients

  • 1 pound Conecuh Sausage, cut into bite-sized pieces (or your favorite link sausage)
  • 1 yellow bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 1 (8 oz) container of sliced fresh mushrooms
  • 2-3 tablespoons olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 400°.
  2. Combine sausage, bell peppers, onions, and mushrooms in a large bowl.
  3. Drizzle olive oil over the vegetables. Sprinkle with salt and pepper. Toss until everything is evenly coated.
  4. Spread mixture evenly on a large rimmed sheet pan.
  5. Bake for 15 minutes. Remove from oven and toss the mixture.
  6. Bake for another 15 minutes, or until sausage is cooked through and vegetables are tender.
  7. Serve as-is, or with hoagie rolls for sandwiches, or over rice for a heartier meal.
