Ingredients

  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Paprika, for color
  • Fresh chives, cut into small pieces for pumpkin stems

Instructions

  1. Place eggs in a saucepan, cover with water, and bring to a boil. Remove from heat, cover, and let sit for 10-12 minutes. Transfer to an ice bath to cool.
  2. Peel the eggs and slice them in half lengthwise. Remove the yolks and place them in a bowl.
  3. Mash the yolks with mayonnaise, mustard, salt, pepper, and enough paprika to give the filling a pumpkin-orange color.
  4. Spoon or pipe the mixture back into the egg whites, creating a rounded mound.
  5. Use a toothpick to gently press vertical lines into the filling to resemble pumpkin ridges. (If you have a piping bag fitted with a frosting tip like I do, use it to pipe the egg yolk mixture into the egg whites for a pretty little pumpkin.)
  6. Place a small piece of fresh chive in the center of each egg to create a pumpkin stem.
