Pumpkin Bread

This is the BEST pumpkin bread you will ever make! It's so moist and DeLiCiOuS! The secret ingredient is a box of instant vanilla pudding. Nothing says fall like the smell of pumpkin bread baking in your oven. It's famous for a reason. The recipe is in both my Volume 1 and Volume 2 cookbooks.

Pumpkin Bread

This is the BEST pumpkin bread you will ever make! It's so moist and DeLiCiOuS! The secret ingredient is a box of instant vanilla pudding. Nothing says fall like the smell of pumpkin bread baking in your oven.

Ingredients

  • 1 1/3 cups vegetable oil
  • 5 eggs
  • 1 16-ounce can pumpkin
  • 2 cups all-purpose flour
  • 2 cups sugar
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon baking soda
  • 1 (5.1 ounce) large package OR 2 (3 ounce) packages vanilla instant pudding

Instructions

  1. Preheat oven to 350°.
  2. Mix oil, eggs and pumpkin in mixing bowl and beat well.
  3. Add flour, sugar, salt, cinnamon, nutmeg, and baking soda to pumpkin mixture and mix until well blended.
  4. Stir in pudding mix with mixer until well blended.
  5. Pour into greased loaf pans.
  6. Makes 2 large loaves- Bake for 1 hour
  7. Makes 5 small loaves- Bake for 45 minutes
  8. Makes 16 mini loaves- Bake for 30 minutes
