MOM'S EASY STRAWBERRY SHORTCAKE
A quick and easy strawberry shortcake made with tender biscuits, sweet juicy strawberries, and a fluffy whipped topping--just like Mom made growing up, and still my favorite.
Ingredients
Shortcake
- 2 cups Bisquick
- 1 tablespoon sugar
- 3/4 cup milk
Strawberries
- 2 quarts fresh strawberries
- 1/3 cup sugar
- 1 teaspoon vanilla
Instructions
Prepare the shortcake
- Preheat oven to 400°F. In a mixing bowl, combine the Bisquick and sugar. Stir in milk until a soft dough forms.
- Drop dough by spoonfuls onto a parchment-lined baking sheet.
- Bake for 10-12 minutes, or until lightly golden.
Prepare the strawberries
- Wash, hull, and slice strawberries. Place in a bowl. Add sugar and vanilla, then gently mash with a strawberry masher (or fork) to release juices. Let sit for a few minutes to get nice and syrupy.
Assemble
- Break open warm shortcakes. Spoon strawberries and juice over the top. Finish with a dollop of Cool Whip or whipped cream. Best served warm with those sweet, juicy berries soaking right in!
