HIGH PROTEIN MEXICAN SKILLET DINNER
A quick one-pan Mexican dinner loaded with protein, cheesy goodness, and bold taco flavor. This easy skillet meal is hearty, satisfying, and perfect for busy weeknights.
Ingredients
- 1 lb ground beef
- 1 packet taco seasoning
- 1 can seasoned black beans
- 1 can whole kernel corn, drained
- 1 cup cottage cheese
- 1 cup salsa
- Tortilla chips, slightly crushed
- 1 cup shredded Mexican blend cheese
- Optional- diced tomatoes, sour cream, green onions for topping
Instructions
- In a large skillet, brown ground beef over medium heat until fully cooked. Drain excess grease if needed.
- Stir in taco seasoning, black beans, salsa, and corn. Simmer 3-4 minutes.
- Reduce heat to low. Stir in cottage cheese until creamy and combined.
- Sprinkle crushed tortilla chips over the top.
- Add shredded cheese evenly over everything. Cover skillet with a lid for 2-3 minutes until cheese is melted.
- Top with tomatoes, sour cream, and green onions and serve warm.
