Easy Shepherd’s Pie

This simple version of Shepherd’s Pie uses ground beef, mixed vegetables, and tomato soup, all topped with buttery mashed potatoes. It’s an easy, no-fuss comfort food that comes together with just a few basic ingredients.

EASY SHEPHERD'S PIE

Ingredients

  • 5 lb. bag potatoes, peeled and diced (You can use instant)
  • 1 stick of butter
  • 1/2 cup of milk
  • 1 lb. ground beef
  • 1 large can condensed tomato soup
  • 2 bags of frozen mixed vegetables, cooked
  • 2 cups of cheddar cheese (optional)
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 350°.
  2. Boil the potatoes until they are fork tender.
  3. While the potatoes are cooking, brown the ground beef. Drain.
  4. Mix the soup and vegetables into the ground beef. Pour into greased casserole dish.
  5. Drain the potatoes, add a stick of butter, milk, salt and pepper and mix until fluffy.
  6. Spread over the top of the beef mixture.
  7. Add cheese if desired
  8. Bake for 30 minutes.
