Easy Shepherd’s Pie
This simple version of Shepherd’s Pie uses ground beef, mixed vegetables, and tomato soup, all topped with buttery mashed potatoes. It’s an easy, no-fuss comfort food that comes together with just a few basic ingredients.

EASY SHEPHERD'S PIE
Ingredients
- 5 lb. bag potatoes, peeled and diced (You can use instant)
- 1 stick of butter
- 1/2 cup of milk
- 1 lb. ground beef
- 1 large can condensed tomato soup
- 2 bags of frozen mixed vegetables, cooked
- 2 cups of cheddar cheese (optional)
- salt and pepper to taste
Instructions
- Preheat the oven to 350°.
- Boil the potatoes until they are fork tender.
- While the potatoes are cooking, brown the ground beef. Drain.
- Mix the soup and vegetables into the ground beef. Pour into greased casserole dish.
- Drain the potatoes, add a stick of butter, milk, salt and pepper and mix until fluffy.
- Spread over the top of the beef mixture.
- Add cheese if desired
- Bake for 30 minutes.
