CAROL HILL'S TOMATO SANDWICHES

This recipe is a summer classic from Carol Hill, full of simple, nostalgic flavor. The overnight chill makes the tomatoes extra juicy and delicious!

Ingredients

  • Fresh tomato slices
  • Sliced onion
  • Paper towels
  • Bread (your favorite kind)
  • 1 cup mayonnaise
  • 1/2 teaspoon mustard
  • Salt and pepper, to taste

Instructions

  1. In a container with a lid, place paper towel on the bottom.
  2. Add a layer of tomato slices, then a layer of sliced onion.
  3. Cover with another paper towel.
  4. Repeat layering tomato and onion with paper towels in between until all are used.
  5. Cover the container with the lid and refrigerate overnight.
  6. In a small bowl, mix mayonnaise with mustard.
  7. When ready to assemble, spread the mayo mixture onto slices of bread.
  8. Discard the onions (or keep if you like them!) and place the chilled tomato slices on the bread.
  9. Season with salt and pepper.
  10. Top with another bread slice, cut in half, and enjoy!
