CREAMED CHIPPED BEEF & PEAS ON TOAST
Creamed chopped beef on toast with peas is pure comfort food. I ate this at my mom's house growing up, and it always felt warm and filling. Simple ingredients, creamy gravy, and memories in every bite.
Ingredients
- 2 tablespoons butter, melted
- 2 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1/8 teaspoons pepper
- 1 cup milk (plus more if needed)
- 1 (15 oz) can LeSueur Peas, drained
- 1 or 2 (2 oz) packages of sliced beef (I used 2 packages of the Buddig brand)
- Toast, for serving
Instructions
- Melt butter in a skillet over medium heat.
- Stir in flour, salt, and pepper. Cook, stirring continuously, until the mixture is smooth and bubbly.
- Remove from heat and slowly whisk in the milk until smooth.
- Return to heat and bring to a gentle boil, stirring constantly. Cook for 1 minute until thickened.
- Stir in chopped beef and peas.
- If the mixture is too thick, add a little more milk until it reaches a gravy-like consistency.
- Serve hot over toasted bread.
- Tip: It thickens as it sits, so don't be afraid to loosen it up with a splash of milk before serving.
