BARBECUE CHICKEN SALAD

We love this delicious BBQ Chicken Salad with a tangy ranch and barbecue dressing. It's quick and easy to make. So good!

Ingredients

  • 1/2 cup ranch dressing
  • 1/2 cup barbecue sauce
  • 2 cups cooked rotisserie barbecued chicken
  • 1 (12 oz) bag romaine lettuce salad
  • 1 (15 oz) can black beans, drained
  • 1 (15 oz) can whole kernel corn, drained
  • 1 cup red onion, sliced into rings
  • 1 cup shredded Monterey Jack cheese
  • 2 cups corn chips

Instructions

  1. In a small bowl, mix together the ranch dressing and the barbecue sauce. Set aside.
  2. In a large bowl, combine the chicken, romaine lettuce, black beans, corn, red onion, and Monterey Jack cheese.
  3. Pour the dressing over the salad. Toss lightly until all the ingredients are evenly coated with the dressing.
  4. Gently stir in the corn chips and serve.
