APPLE CRANBERRY PECAN CHOPPED SALAD

I took inspiration from Six Sisters and made this yummy, refreshing salad. The dressing is divine. You will love it!

Ingredients

  • 8 cups chopped romaine lettuce
  • 2 apples, chopped (pears work great too)
  • 1 cup dried cranberries (Craisins)
  • 1 cup chopped pecans (walnuts or almonds are also a great substitution)
  • 8 slices of bacon (crisp cooked and crumbled)
  • 5 ounces feta cheese, crumbled (optional)
  • 3/4 cup poppyseed dressing (I used Brianna's brand)
  • 1/4 cup balsamic vinaigrette dressing (make sure to use vinaigrette dressing and not balsamic vinegar)

Instructions

  1. In a large bowl, combine the lettuce, apples, cranberries, pecans, bacon and feta cheese.
  2. In a smaller bowl, combine poppy seed dressing with balsamic vinaigrette.
  3. Drizzle over salad right before serving. If you prefer to have more salad dressing, feel free to experiment with the combination.
