Egg Roll in a Bowl is everything you love about an egg roll--without the wrapper! This quick, one-pan meal is packed with protein and veggies, making it a delicious, low-carb dinner the whole family will enjoy.

Ingredients

  • 1 lb ground pork (or ground chicken, turkey, or beef)
  • 1 tablespoon sesame oil
  • 1 small onions, diced
  • 1 tablespoon fresh ginger, grated
  • 1 (14-16 oz) bag coleslaw mix (shredded cabbage and carrots)
  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 2 green onion, sliced
  • Chopped peanuts or cashews (optional)

Instructions

  1. Heat sesame oil in a large skillet over medium-high heat.
  2. Add the ground pork and onion. Cook until the meat is browned, breaking it up as it cooks. Drain excess grease as needed.
  3. Stir in the garlic and ginger; cook for about 30 seconds until fragrant.
  4. Add the coleslaw mix, soy sauce and rice vinegar. Cook for 5-7 minutes, stirring often, until the cabbage is tender but still has a little crunch.
  5. Top with sliced green onions and chopped peanuts before serving.
