Egg Roll in a Bowl is everything you love about an egg roll--without the wrapper! This quick, one-pan meal is packed with protein and veggies, making it a delicious, low-carb dinner the whole family will enjoy.
Ingredients
- 1 lb ground pork (or ground chicken, turkey, or beef)
- 1 tablespoon sesame oil
- 1 small onions, diced
- 1 tablespoon fresh ginger, grated
- 1 (14-16 oz) bag coleslaw mix (shredded cabbage and carrots)
- 3 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 2 green onion, sliced
- Chopped peanuts or cashews (optional)
Instructions
- Heat sesame oil in a large skillet over medium-high heat.
- Add the ground pork and onion. Cook until the meat is browned, breaking it up as it cooks. Drain excess grease as needed.
- Stir in the garlic and ginger; cook for about 30 seconds until fragrant.
- Add the coleslaw mix, soy sauce and rice vinegar. Cook for 5-7 minutes, stirring often, until the cabbage is tender but still has a little crunch.
- Top with sliced green onions and chopped peanuts before serving.
