EASY LASAGNA SOUP

This lasagna soup is the ultimate comfort food. So yummy served with a crusty piece of bread. You will love it!

Ingredients

  • 1 pound ground beef
  • 2 cans (14.5 oz each) garlic roasted tomatoes, undrained
  • 1 jar (24 oz) spaghetti sauce
  • 2 cups beef broth
  • 1 cup water
  • 1 teaspoon Italian seasoning
  • 8 lasagna noodles broken into bite-sized pieces
  • 1/2 cup heavy cream
  • 1 cup mozzarella cheese

Instructions

  1. In a large pot, brown the meat over medium-high heat. Do not drain fat off the meat.
  2. Add garlic roasted tomatoes, spaghetti sauce, beef broth, water and Italian seasoning. Bring to a boil then reduce to a simmer. Simmer for 10 minutes.
  3. Add the broken uncooked noodles to the soup. Stir to combine. Simmer for 10 minutes or until noodles are cooked through.
  4. Just before serving, stir in heavy cream and mozzarella cheese.
