EASY BACON RANCH BOWTIE PASTA SALAD
From my sweet friend The Meal Prep Mamacita--an amazing cook! The homemade ranch dressing makes this bacon ranch pasta salad easy, creamy, and so yummy.
Ingredients
- 1 (12 oz) box bow tie pasta
- 1 cup frozen peas, thawed
- 1/2 cup red onion, diced
- 1 cup cherry tomatoes, sliced
- 1 teaspoon dried parsley
- 1/4 cup grated Parmesan cheese
- 1 teaspoon black pepper
- Cooked, crumbled bacon (I used real bacon pieces from a bag for convenience)
RANCH DRESSING
- 1 ranch seasoning packet
- 1 cup mayonnaise
- 1/2 cup Greek yogurt or sour cream
- 1/2 cup milk
Instructions
- Make the ranch dressing: Whisk together the ranch packet, mayonnaise, Greek yogurt (or sour cream), and milk until smooth. Refrigerate while preparing the pasta.
- Cook bow tie pasta according to package directions. Drain and rinse with cold water.
- Stir in peas, red onion, cherry tomatoes, bacon pieces, parsley, Parmesan, and black pepper.
- Pour chilled ranch dressing and toss until well coated.
- Chill for at least 30 minutes before serving for best flavor.
